Closing e-mail conversation from the chat

This feature allows to close chat from e-mail conversation.

How to set custom subject for an e-mail ticket which being closed from chat

Navigate to

Mail conversation > General options > Other (section)

While creating subject I would suggest to check Internal so this subject will not be able to choose for operators manually.
